Acidity: 0.7 – 0.8 (oleic acid).

REQUIREMENTS ORGANOLEPTIC Internal color of bean: brown
Odor: characteristic cocoa, free of odors, mold, burn, smoke, etc.
Taste: pleasant cocoa. 
Number of grains/100 g: 75-80 beans /100 g: 75-80 granos
PHYSICO CHEMICAL Humidity: 7.5% máx.
Fat: 50% mín.
Acidity: 0,7 – 0,8 (oleic acid)
